Chennai Fest: Where South Indian Cuisine Meets our Barbeque Grill

From dosas and uttapams to paniyaram and chukka, discover this extraordinary cuisine along with the twist we have given to it at Absolute Barbecues. You can never stop experimenting with food, so here are a few unique concoctions of south Indian meals with contemporary cuisines.

Chocolate Paniyaram

Paniyaram is also known as puddu or guliyappa in certain parts of the country. It’s a small rice ball that is made by using fermented rice and urad dal batter. The surface of the ball is meant to be slightly crispy and the inner part is meant to be soft, resembling a dumpling. Typically, in south Indian cuisine a paniyaram is served with a type of chutney. However, we have made our own spin to make it a sweet dish, blending the soft rice ball with chocolate.

Pizzappam

We all love Pizza and we all love Uttapams. The concept of a pizzappams is to marry a pizza with an uttapam. Pizzas typically have a bread base, coated with a delicious tomato sauce and sprinkled with your favourite toppings like cheese, chicken, mushroom, corn etc.

An uttapam is similar to a pizza, except that the base is purely made with rice and urad dal batter. One of the classic ways to serve this south Indian dish is to top it with fried onions, tomato, capsicum and green chilli. A fusion of these two dishes was a match made in heaven. A Pizzapam essentially has a rice base with pizza toppings.

Mutton Chukka Pita Pockets

Mutton chukka is among the most famous South Indian delicacies coming from the region of Tamil Nadu. This dish is bound to work up a good sweat because of its bold and spicy flavours. It’s made with freshly ground Chettinad masala, fried onions and ginger garlic paste. Because of its strong flavour, it is normally paired with rice, chapati or roti so that it can bring the spice down.

Pita pockets are a Middle Eastern type of bread that is normally served alongside their dishes. The kick and pungency of the mutton chukka is beautifully complemented with this subtle and tamed flavour of the pita pocket.

Andhra Steamed Fish with Chimichurri Sauce

Andhra Pradesh is also known for its spicy dishes. The cuisine is filled with hot and tangy non-vegetarian and vegetarian dishes. Because it’s a coastal area, their seafood dishes are their a speciality.

A typical Andhra Pradesh fish meal comprises of a a pomfret covered with a generous amount of spices that ends up in a vibrant coloured curry. With our adaptation of this dish at Absolute Barbecues, we have steamed the Andhra fish and topped it with a delicious chimichurri sauce. The parsley, coriander and oregano come together wth garlic and onions and make the perfect sauce to complement the flavour of the fish

Fusion foods are all about adding bits and pieces of different ingredients, cuisines and culture in one dish. The unique mix south india cuisine and continental cuisines is all about to cultures coming together as well. You may have grown up being used to certain dishes and certain flavours. When you see the paniyaram being paired with chocolate, or the uttapam alongside a pizza, the sense of intrigue is tangible.
